“Caesar” Brussels Sprouts inspired by Baco Mercat Restaurant

"Caesar" Brussels Sprouts

“Caesar” Brussels Sprouts

I wish I had come up with this idea on my own. “Caesar” Brussels sprouts is a no brainer.  Combine two beloved dishes together and you get a new beloved dish.  I tasted “Caesar” Brussels sprouts for the first time at “Baco Mercat” Restaurant in downtown Los Angeles. The next time I was downtown for the Culinary Historians of Southern California meeting at the Central Library, I had to go back for more.  I sat at the counter alone analyzing this dish and taking notes.  How did they make this special?  Sorry, I had to copy it…and thanks to my good detective work, you can have the recipe yourself.  We made this dish in our March Meals in Minutes cooking class and it was a huge hit.  So easy too, rated by team members Cliva and Susan. Rancho La Puerta is a sanctuary for body and soul.

Salad from The Rancho La Puerta Garden.

Salad from The Rancho La Puerta garden.

New Year’s Resolutions?  A trip to Rancho La Puerta Spa in December inspired my resolutions for 2014.  Rancho La Puerta Spa is a sanctuary only an hour away from the San Diego hustle & bustle.  If your resolutions are related to food, the word I learned at The Ranch, as it is called, is portion control.  They don’t promote portion control.  It’s just that the meals served there are so tasty, you don’t need a lot to be satiated.   They smartly serve small portions of whatever is on the menu encouraging you to restrain yourself from asking for more (which is more than welcome). Bibb & Arugula Salad with Pecorino Romano

Bibb & Arugula Salad 6-13This Bibb and Arugula Salad with Pecorino Romano is a new favorite. Twenty years ago, not too many people had tasted arugula when it found its way into my garden.  Its bitter taste was a little offsetting when I made it into an arugula pesto back then.  But now, the arugula we eat today, seems to have been tamed. The tiny arugula leaves found in the supermarket in a cellophane plastic bag is not the same as the spicy and bitter arugula that has continued to reseed itself in my garden for the past 20 years.  It’s like a weed, but a welcome weed.   Today’s arugula is sweeter – a different variety perhaps.  However, I think that my tastebuds have also succumbed to its magic. Easy Barbecue Ribs top Summer Favorites

Ribs stacked 7-12I tried to drive into Costco on the 3rd of July and quickly realized I would not find a parking space, so I left asap.  What was I thinking!  I wanted to purchase some ribs to make on the weekend – not for the 4th.  So I went back on the 5th after things had calmed down to get a package of Swift Premium St. Louis-style ribs to make these almost famous Best-Ever ribs that I found in Bon Appetit magazine.  Watch out Famous Dave’s!  If you love pork ribs and want them fast, you’ve gotta try these.  10-20 minutes prep time and 3 hours in the oven. Southwestern Quinoa Salad with Chile-Lime Vinaigrette

Southwest Quinoa Salad 6 5-5-13On Cinco de Mayo I made this Southwestern Quinoa Salad for about 50 people following our church service at Holy Nativity where I teach cooking classes.  We had made this dish in our August Garden to Table Cooking Class.  It is healthy, pretty and delicious.  People kept coming back for more and asking for the recipe.  So here it is.  It would be a delicious addition to your summer barbecue or when you need an easy potluck dish to bring to a picnic.
