Camp Blogaway Inspires 100 Food Bloggers

One hundred campers in the Big Bear Mountains – The super moon – Threat of bears & critters – Camp Blogaway this year lived up to my expectations.  This camp designed by Patti Londre of Worth the Whisk is a haven for food bloggers and foodies like me.  This is where we come to learn about what’s new and how to hone our craft.   A photography session and how to navigate through the social media landscape were my choices at the breakaway sessions.  I learned a thing or two.  Hopefully my photos keep improving!  After last year’s Camp, I entered the Facebook era.  I’m still working on Twitter and now there’s Pinterest – a lot for my brain to compute! Slicing and Dicing is Delicious!

Onions 5-11I took my Knife Skills class some 16 years ago in UCLA Extension’s  Professional Cooking program.  It was the best class I have ever taken.  Why you ask?  Because learning to use a knife properly cut my cooking time to 1/3 of the time.  Once I learned to slice and dice properly, I had the freedom to create everything in a FLASH.  It was very liberating.  So…I was thrilled Wednesday night to share my Knife Skills with 16 other students in our Knife Skills Class at Holy Nativity’s Community Hall in Westchester. Knife Skills + Dinner = May 4, 2011 Cooking Class

Do you like to watch the Iron Chef or just marvel at how the chefs on TV can slice and dice in a FLASH.  On Wednesday May 4, your cooking will be transformed when you learn how to use a knife properly.  I know Knife Skills is not a sexy name, but what will really make your meals ready in a Flash, is when you can use a knife like a pro..and I would like to show you how to do this.   I’ve been thinking about the dishes we will make from all the vegetables we will be cutting.

We will be cutting some onions, so I thought we could caramelize the onions and then use them in dishes like French Onion Soup and Caramelized Onion Foccacia Bread.  Potatoes are good to practice slicing and dicing, so we will use Sweet Potatoes and bake up some Sweet Potato Fries. (more…)
