Bread Pudding with Pineapple, Raisins, Pine Nuts and Tequila Sauce

This bread pudding is addictively good.  I’ve served it three times now and no one can resist.  Maybe its the gooey center formed from the custard. The fragrance from the vanilla and baking bread or the sweetness of the pineapple and golden raisins. Perhaps its the syrupy tequila sauce.  It’s the kind of dessert that when you offer seconds to guests, they will accept with a bit of guilt on their face.  Don’t have this around if you are on a diet.  Make it for company and make only what you can eat, because the rest is going to disappear into your own tummy, unless you have lots of willpower. Italian Caponata goes with everything!

CaponataMy new favorite dish is Italian Caponata.    It’s a stew from Sicily where tomatoes and eggplants abound, so it’s a perfect autumn dish when you’re searching for yet another tomato recipe.  I’m headed to the Farmer’s market today to get more Italian eggplant for yet another bowl of this luscious creation. The Ultimate Veggie Burger

Ultimate Veggie Burger 7-13I know I’m going out on a limb by calling this the Ultimate Veggie Burger, but after our Summer Garden & Grilling Cooking Class, all ten people who tasted it agreed.  What makes it the ultimate?  First of all, it is true Fresh Food in a Flash.  No frozen patties that contain extra stuff you don’t want to eat.  Delicious, spicy, chewy, delicate, flavors that keep popping in your mouth – no cardboard here.  Even us meat eaters would choose this veggie burger over it’s meaty brethren.  Well most of the time; unless the meat is prime chopped, cooked rare – a discussion for a later time. No guilt associated with this burger! Soups, Stews & Bread Class – January 10, 2013

Corn Chowder Cover 11-12With the cold weather upon us, how about learning to make something to warm the heart and your tummy?  SOUP!  There is nothing like a warm bowl of home-made soup to chase away the winter blues.  Add a slice of freshly made bread and you have an amazing meal.

The Soups, Stews & Bread Class will be on Thursday, January 10, 2013, 6:00 – 9:00 at the Holy Nativity Community Hall in Westchester.  Sign up for it now. In this class, you will learn to make fresh vegetable stock, which will become the base for many of our soups.  Once we complete the cooking, sit down and enjoy a meal you and your new friends made together with a glass of wine.
