How to Roast a Red Pepper…yellow, orange or green.

Roasted Red Pepper 1 10-13Roasting peppers at home rewards you in so many ways.  The aroma of roasting peppers with the smoke enveloping your room will make you hungry in a healthy way.  Sure, you can buy roasted red peppers in a jar, but there is nothing like the real deal…and it couldn’t be easier to make roasted red peppers.  All you need is about 20 minutes of advance time when you are hanging out or getting the rest of your meal prepped.   Many homes have a gas grill or a gas cooktop, which is the perfect method, but you could roast them under a broiler or in the oven on a baking sheet at 400° if you have no other choice, although it will take a little more time. Make Gazpacho before summer tomatoes disappear!

Like a fine wine, this gazpacho improves with age.  My age that is.  Some years ago, I tasted gazpacho in a Los Angeles restaurant and fell in love.  Since then I’ve been on a quest to make my own at home, always feeling I’ve come up short.  On top of it, my tastebuds have become more refined with age, so the bar is set ever farther.  I’ve tried numerous recipes always to be disappointed.  Recipes that call for tomato juice in addition to fresh tomatoes, recipes where the gazpacho marinates overnight, authentic Spanish recipes that refresh day old bread in water.  None were satisfactory to me.  I was determined to find the perfect gazpacho recipe for our August Garden to Table Cooking Class, so I tinkered around in the kitchen and came up with this recipe…and I finally have found my match! 5-Minute Chocolate Mousse, 4 ingredients!

Chocolate Mousse with Smiley FaceI love the challenge of coming up with recipes that can be made quickly, but yet are fresh and delicious. This dessert is a great example. The 4-ingredient, 5-Minute, Ready in 30 Chocolate Mousse could not be easier to make. I developed this recipe for my 30-Minute Cooking Class and it is foolproof. Hannah and Emily, our young students made this dessert while giggling and licking chocolate covered spoons. They decided to make faces in each cup with the berries. The raspberry eyes remind me of a robot gone berserk! (more…)
